forgot to mention earlier besides spiking it with wine or fruit or booze i also add VINEGAR. i dont drink a lot of sherry as i mentioned the other day, but i always have sherry vinegar at hand (the best tasting vinegar) and add it to the bubbly water. the mix works also with other vinegars and fruits and syrups etc, but yeah think of the water as a blank canvas not necessarily an end it itself. e.g. see this here:
