Jerez is quite a special place innit, I agree the vinegar is amazing, especially on ensaladas. I always use too much according to my partner, but there is no such thing as too much Sherry vinegar... I didn't realise you could mix and drink the bastid?! That was a good read regarding the Shrub. I have some Brandy so will look into knocking something up.
After a quick search I have found a recipe for something called Spanish Penny which consists of Rye, Maple syrup, & Sherry vinegar. Looking forward to trying it.
