I am well aware of the dependence of this country's grossly bloated hospitality industry on cheap labor, largely to cater to nouveaux riches finance sector rentiers. The whole system amounts to the hospitality workers constituting an out-of-house domestic staff, and is founded upon income and wealth inequality. A massive reorganization of that sector, and of relative wage rates generally, is urgently called for.
